July 11, 2009 – I actually ate breakfast!

So it wasn’t much of a breakfast but I just ate  1/2 cup lowfat cottage cheese, 1/4 cup blueberries, and a little turkey breakfast sausage. I detest breakfast but ate it. I’m really trying to make myself eat something in the morning and I aim for eating before I’ve been up 45 minutes but it’s usually an hour to an hour and a half later that I can stomach food.

I know breakfast is important and I know they say its the most important meal of the day but I just can’t bring myself to eat it most days. And I’m trying, I really am! I just don’t feel hungry until I’ve been up awhile and the thought of eating makes my stomach turn. So, I think I did well eating what I ate this morning.

By the way, my FBG was 134. Too high again. Dammit.

Breakfast Bowl

Breakfast Bowl

This is a breakfast sausage bowl filled with scrambled eggs and topped with Pico De Gallo. I made it using my sister Denise’s recipe for breakfast meatballs and a 3″ Better Baker Gourmet Bowl Maker from Cook’ Choice.

Breakfast Meatballs

1 pound turkey sausage
1 pound lean ground beef
2 eggs
3 Tablespoons onion, minced
1/2 teaspoon crushed red pepper (omit if you want mild meatballs)
5 ounces cheese, grated
salt, pepper, and other spices to taste

Preheat oven to 350°. Combine all ingredients spices in a bowl and mix well. Roll meat mixture into bite sized balls and bake until done, 15 to 20 minutes.

These freeze well so after baking them I put them in the fridge to cool then put a few in a freezer bag or plastic container, label with the date and contents, and freeze. When ready to use them, I just heat them in a 350 oven for about 25 minutes or microwave them on high for about 4 minutes.

These are a great take along snack and as a bonus, most kids love them. Uncooked, this also makes a nice stuffing for peppers, squash, mushrooms, etc. Just fill your vegetables with the meat mixture and bake until done.
